Had to go with "Gladiator". It's got great action, a beautiful CG representation of Rome, an all around great period piece.

Yes, I also had to leave out: "The Silver Brumby", "Love in Limbo", "Spotswood", "Hammers Over the Anvil", "Proof", "The Crossing", and "Prisoners of the Sun". I had no idea he had made so many films.
