Seems like everyone is waiting for the Gathering attendees to return home and report on the 2010 event, so I thought I'd throw a few posts into the mix in the meantime. When I saw this recipe in the most recent issue of the Pennsylvania Outdoor News, I knew it had to be offered up for your delectation. It's the best-sounding possum recipe I've ever read! OK, the only one, too.

Apple-Roasted Opossum

1 young opossum
Dressing
Bacon slices
3 cups water
Salt
1 Tbsp. sugar
1 Tbsp. lemon juice
Pared, quartered apples

Parboil opossum in salted water until tender. [This will probably produce "scum"!] Stuff with any preferred dressing. Place on rack in roaster and cover with bacon slices.

Dissolve sugar and lemon juice in water, add to pan, and bake at 450 degrees for 2 hours. Drain all but about 1 cup of liquid from pan. Surround opossum with apples. Continue baking for 1/2 hour until opossum is tender.

Serves 3-4.

Possum, eh ... yuk ... though in Lonesome Dove, that old coot made me hungry skinning one!

You can skip the parboiling step and cut the baking/roasting step by half an hour if you get one off the road which has several good hours in a hot summer sun... NOT!!

Why did the chicken cross the road? To prove to the possum that it really could be done......
