Marcia is right about the guide book. Although I backpack, I have only done dayhiking in the Pisgah National Forest, but a friend of mine has backpacked there and really enjoyed it. It's beautiful and several LOTM scenes were filmed there. Linville Gorge is one of my favorite places - be sure to include that area for your trip! Happy planning!
