Well, now Clabert, I just said that head cheese was NOT a southern creation, and I don't want to get in trouble with YOU, as I know you are a Southerner tried & true. BUT, I'm thinking perhaps head cheese is just an OLD dish that really isn't Northern OR southern, specifically. I know my father's people were as NORTHERN as you could get. And my mother's people are from Georgia going WAY back. My mother had never even HEARD of head cheese until she married my father. Or perhaps your grandmother brought the tradition from France with her?

Anyway, you can be forgiven since it DOES have the ever important hawg jowls in it, though the kind I got familiar with in Pennsylvania has a lot more than just that. It's more like blood pudding, a REALLY disgusting mess!
