NO NO NO. If you simmer it with the neck and the heart, then cut all that rubbery tissue off it, slice it thin and cube it and put it in the stuffing it is very tender!! Truly!

The gizzard I am talking about of course. I don't know WHO that dumb cluck is thinking gizzards were kidneys ol' Butterball was shoving in the cavity........

Grits and greens. Yeah. How tasty. Sounds like you need to clean your greens a little better under some running water and maybe they wouldnt be so dang gritty. Corn pone is okay. But ballin' hawg jowls??????? And you sneer at marrow toast? HAWG JOWLS? Pig cheeks? What's next? Steer lips? Mouse brows?

Huh! Strange folks down there in the deep south......strange.
I don't even want to KNOW what you guys mean by Gator Aide.....
