Hi Bill,
The only kidney I've ever tried was a kidney and intestine concoction made from whales, and I have to tell you, it was like eating rubberized gravel. I've never had the courage to try anything like it again. In my turkey stuffing, I put the heart, liver, and gizzard, but never kidneys! Even I have my limits!
