Hi Bea,
We don't! :o) Thanksgiving Day celebrates the pilgrims landing safely in the New World and their giving thanks for getting safely out of England, to a new world where they could be free to practice their religion etc. without being persecuted. Back then, the English didn't view it in quite the same way, so didn't tend to join in their thanks and didn't set this day aside as a holiday! :o)
Of course, many, many Scots travelled to the New World, particularly during the Highland Clearances, and no doubt they joined hands with the Pilgrims and thanked God for delivering them from evil.
However, all that is in the past, and though it ISN'T a holiday here, we do recognise that others on the other side of the pond are celebrating and thanking God for 'a safe harbour and a bountiful harvest' and generally, we on THIS side wish you all a very happy day!!
But - 'old habits die hard'!! Around this time of year, I STILL feel a strong urge to cook turkey etc.!!
