I have a friend that needs some recipes, and I was hoping that someone on the board might be able to help her. If you have any recipes for what she is looking for, please post them and I will send them on to her. Below is her letter. THANKS!!!

Does anyone have any good recipes for low-cholesterol, low saturated fat and low sodium diets? I found a few but most often I find a low cholesterol meal and yet it is very high in saturated fat. That doesn't even make sense when the saturated fat turns into cholesterol once it gets in your body! Or the sodium is at an unbelievable high level.

WW comes to the rescue again! I have a family member who has a liver problem and can eat very little fat, so I am always on the look-out for these kinds of recipes.

Safe Sloppy Joes

1 lb. ground chicken or turkey
1 small onion, chopped
3/4 to 1 cup ketchup (yep, that's what I said!)
1 Tablespoon Worcestershire sauce
1 Tablespoon prepared mustard
2 Tablespoons sugar or Splenda

Brown the ground meat and onions. Drain. Add rest of the ingredients and simmer for a few moments. Serve over toasted English muffins, or in a pita, or in a wrap, or in a hamburger bun. If you can eat cheese, some grated jack is good on top.

It's quick, easy and you will be surprised at how good this sauce tastes!

And another...

Fat-free Stroganoff

1 lb. ground chicken or turkey
1 small chopped onion
1 cup sliced mushrooms
1 can 98% fat-free, low-sodium Cream of Chicken soup (Campbells)
8 oz. container of fat-free sour cream
nutmeg
1 lb. package of noodles

Brown the ground meat and onions, drain. Add soup and simmer til hot. Lower heat and add sour cream and a couple dashes of nutmeg. Heat but do not boil. Serve over cooked, hot noodles. Also good over cooked rice.

Thanks WW!!! I will send these recipes to her. Her dad has been hospitalized because of his heart, and I think that he has to be on a strict diet when he comes home, so she is trying to find as many recipes as she can. She will really appreciate this!!!

You are very welcome, Kay. Here's another:

Chicago Spaghetti

1 lb ground chicken or turkey
1 small onion, chopped
1 small green pepper, chopped
1 can Hormel 99% fat-free turkey chili
1 can pinto beans
chili sauce, added to taste
cumino and chili powder added to taste
you can throw in some salsa if you wish
water added as needed, or not

Brown meat, onions and peppers; drain. Add all other ingredients and simmer for a while. Serve over hot, cooked spaghetti.

Note: the Hormel turkey chili is a bit high in sodium, but I figure that it is diluted so much in the whole recipe that it isn't too bad. If you think it is, you can omit it and add a can of kidney beans and more spices to compensate. This is one of those recipes that you can play around with and improve upon.
